地瓜圆红豆糖水 Red Bean Soup with Sweet Potato Balls

喜欢吃芋圆地瓜圆冰。
一直希望可以学做芋圆,地瓜圆。
终于,有了我第一次的地瓜圆。

地瓜圆口感QQ的,对于这个食谱,我很满意,以后会跟着这个了。
将我爱的地瓜圆加入冷藏后的红豆糖水,感觉好好~

材料(红豆糖水):
红豆            250g
白糖            适量

做法:
  1. 将红豆洗净后浸泡15分钟。
  2. 煮一锅水至沸腾,将红豆倒入锅中,以大火煮约20分钟。
  3. 熄火,待一个小时后再以中火煮约一个小时至红豆开花。
  4. 加入适量的白糖即可。

Red Bean Soup Ingredients:
Red bean       250g
Sugar             Add to taste

Method:
  1. Soak the red beans for approx. 15 minutes.
  2. Boil a pot of water, add in the red beans and cook over high heat for approx. 20 minutes.
  3. Turn off the heat. After an hour, cook it over medium heat for approx. an hour til it become soft.
  4. Add some sugar to taste. Ready to serve.

材料(地瓜圆):
地瓜            100g
木薯粉        30g
白糖            1tbsp
热水            少许

做法:
  1. 将地瓜切块后蒸约20分钟至熟。
  2. 取出,压成地瓜泥。
  3. 另一边厢,将木薯粉加入一些热水,用汤匙快速搅拌成团。
  4. 将地瓜泥和糖加入面团,搅拌均匀。
  5. 酌量地加木薯粉,搓揉至不粘手即可。
  6. 取少许面团,揉成长形,再切小段,并放入一个已撒上少许木薯粉的碟子上。
  7. 煮一锅水至沸腾,放入地瓜圆,煮至地瓜圆浮在表面,就可将其捞出。
  8. 将地瓜圆放入一锅冷水即可。
备注:
可以将多余的地瓜圆留着不要煮,放入一个干净的袋子,再收进冰箱冷冻处,待要吃时就随手可以煮了。

Ingredients (Sweet Potato Balls):
Sweet Potato     100g
Tapioca starch    30g
Sugar                 1tbsp
Hot water           Some

Method:
  1. Cut the sweet potato into chunks and steam for approx. 20min til soft.
  2. Mash the sweet potato.
  3. On the other hand, add some hot water into the tapioca starch and mix quickly to form a dough.
  4. Add the mashed sweet potato and sugar into the dough and mix well.
  5. Add some tapioca starch accordingly to form a non-sticky dough.
  6. Take some of the dough and roll it into long cylindrical shape and cut it into smaller pieces. Place them onto a plate with some tapioca starch to prevent them from sticking together.
  7. Boil a pot of water, add in the balls and cook until all floated on top.
  8. Drain and soak them in a bowl of cold water to maintain their chewiness.
Note:
We can keep the extra uncooked balls in a clean plastic bag and store them in a freezer so that when we need it, we do not have to spend our time to make them again.

  1. 你好!我想请问第三的做法,是把30g的木薯粉都加入热水吗?那么第五做法里的木薯粉是另外的量吗?热水的量又大概多少呢?

    1. 你好!是的,30g木薯粉都加热水。关于热水的量,我是放约4汤匙。这不是一定的,它也得视乎你的木薯粉的吸水量。只要一汤匙一汤匙地加,加到水的分量足够让木薯粉混合成团就够了。
      第五做法里木薯粉是另外加的(不包括在30g内)。它也是一点一点地加,直到面团不黏手即可。
